Oh yes we did. Me and two other ice cream lovers opened a pop-up ice cream parlor, just because we could! What started as a wild idea during a pre-summer evening eventually got us grabbing pen and paper and the night ended with a concrete but fun plan.

Guess we had all daydreamed about the idea of owning an ice cream parlor so often and for so long we all knew very well how we wanted it. Since summer was right on our doorstep we had to move super quickly. We thought of a concept that would be a perfect ice cream match: with a hint of holidays but with absolutely no budget and time. Cuba seemed like the perfect theme for it’s charming, unfinished look and as a perfect escape to wander off with a cone of sweet coolness in your hand.

We turned our basements, attics and garden sheds upside down to look for licks of colourful paint for the walls, ice cream bowls with a touch of grandmother and some decorations that would do the trick. Off course, no ice cream parlor without … ice cream so I rung up the lovely people from Eiskreem in Mechelen. One week later, we opened Cuba Ijscobar in a side room of the Tajine bar from our compagnon Yousra, other compagnon Pablo took care of the branding!

Oh what a wonderful adventure that was! It still gives me chills ;-)
